Anjeer Barfi is a delectable Indian sweet that features dried figs (anjeer) as the primary ingredient. It is a rich and indulgent treat with a fudgy texture and a naturally sweet flavor.
To prepare Anjeer Barfi, dried figs are soaked in warm water to soften them. Once softened, they are finely chopped or pureed to form a smooth paste-like consistency.
In a separate pan, ghee (clarified butter) is heated, and the fig paste is added along with powdered sugar. The mixture is cooked over low heat, stirring continuously, until it thickens and begins to come together.
At this stage, additional ingredients such as khoya (reduced milk solids), cardamom powder, and chopped nuts like almonds or pistachios are added to enhance the flavor and texture of the barfi.
The mixture is then transferred to a greased tray or plate and flattened to create an even layer. It is left to cool and set, either at room temperature or in the refrigerator.
Once the Anjeer Barfi has hardened, it is cut into square or diamond-shaped pieces for serving. It has a soft, fudgy texture with a rich and sweet taste from the figs. The addition of khoya, nuts, and cardamom enhances the overall flavor profile, adding a creamy and aromatic dimension to the barfi.
